This matters for a specific, practical reason. Pollen is the only reliable way to determine where honey came from. Remove the pollen and honey becomes untraceable — you cannot tell whether it came from an orange grove in Florida or a barrel of unknown origin routed through a third country to dodge tariffs.
Ultra-filtration is not a food-safety process. It is a process that removes microscopic particles by forcing honey through fine filters, often at high temperature and pressure. It produces a product that stays clear on the shelf for a long time and never crystallises. It also destroys the audit trail.
What "Raw" Actually Means
Raw honey is honey that has not been heated above hive temperature — roughly 95°F / 35°C — and has been strained rather than filtered. Straining removes wax fragments and the occasional bee leg. Filtering removes pollen, enzymes, and much of what distinguishes honey from syrup.
The things heat destroys:
- Diastase and invertase — enzymes bees add to nectar to convert it into honey. Diastase activity is used internationally as a standard freshness and heat-damage marker.
- Glucose oxidase — the enzyme responsible for honey's slow release of hydrogen peroxide, and the source of much of its antimicrobial activity.
- Volatile aromatic compounds — the reason buckwheat honey tastes like molasses and orange blossom honey tastes like citrus. Heat flattens these into generic sweetness.
- Pollen and propolis traces — the components carrying most of honey's antioxidant content.
Pasteurisation of honey is worth pausing on, because it is often defended on safety grounds. Honey does not need pasteurising for safety. Its low water activity and acidity make it inhospitable to almost all pathogens — honey is one of the few foods that does not spoil. It is pasteurised to delay crystallisation and improve pourability. That is a cosmetic and logistical decision, not a health one.
Crystallisation Is a Good Sign
Most people treat crystallised honey as spoiled. It is the opposite. Crystallisation is the natural behaviour of real, raw honey with intact glucose content, and different floral sources crystallise at different rates — clover fast, tupelo and acacia very slowly. If a jar has sat in your cupboard for two years and remains perfectly clear and pourable, that tells you something about how it was processed.
To reliquefy crystallised honey, stand the jar in warm — not hot — water. Microwaving it undoes exactly what you paid for.
Local Honey vs Commercial Honey: The Practical Differences
Traceability
Local honey usually comes with a name attached — an apiary, sometimes a specific yard. Commercial honey is frequently a blend, and labels such as "Product of USA" may refer to where it was packed rather than where the bees flew. Honey is one of the most adulterated foods in global trade, commonly cut with rice, corn, or beet syrup, and transshipment to disguise origin is a documented and ongoing problem.
Flavour
Single-origin raw honey tastes of somewhere. It varies by season, by rainfall, by what happened to be blooming in a three-mile radius. Blended commercial honey is deliberately standardised so that every jar tastes identical — which is a genuine achievement of food engineering and also the point of the exercise.
Composition
Raw honey retains its enzymes, pollen, propolis traces, and antioxidant compounds. Heavily processed honey retains sugar. Both are roughly 80% sugar and around 17% water — nobody should mistake honey for a health food in volume — but the remaining fraction is where the difference lives.
Price
Local raw honey costs more, and it should. Commercial pricing is set by a global commodity market that small beekeepers cannot compete in without either scaling to industrial size or cutting corners.
The Allergy Claim: Let's Be Straight
The most repeated claim about local honey is that eating it desensitises you to local pollen and reduces seasonal allergy symptoms. It is intuitive, it is charming, and the evidence does not really support it.
A randomised controlled trial by Rajan and colleagues, published in Annals of Allergy, Asthma & Immunology in 2002, compared local unfiltered honey, commercial filtered honey, and a honey-flavoured placebo in allergy sufferers. It found no significant difference between the groups in symptom relief.
There is a mechanistic reason for this. Seasonal allergies are overwhelmingly triggered by wind-borne pollen — ragweed, grasses, tree pollen. Bees collect flower pollen, which is heavy, sticky, and carried by insects precisely because it does not travel on the wind. The pollen in your honey is largely not the pollen making you sneeze.
Some later work has been more favourable, and the question is not fully closed. But we are not going to tell you local honey fixes hay fever. Buy it because it tastes better, because it is traceable, and because of who it supports.
What Local Honey Genuinely Offers
- Verifiable origin. You can, in principle, drive to the hives.
- Intact enzymes and antioxidants. Unheated honey retains its glucose oxidase activity and its polyphenol content.
- Real flavour variation. Honey as an agricultural product rather than a commodity sweetener.
- Support for small-scale beekeeping. This is the one that compounds.
Why the Beekeeper Matters More Than the Jar
Buying local honey is one of the few purchases that acts directly on a conservation problem rather than adjacent to it.
Managed honey bee colonies in the United States have been under sustained pressure. National surveys run by the Bee Informed Partnership have repeatedly recorded annual losses of managed colonies approaching or exceeding 40% in a single season, driven by a combination of Varroa destructor mites, pesticide exposure, pathogens, and habitat loss. Small-scale beekeepers who manage for colony health — leaving adequate honey stores for winter rather than extracting maximum yield and substituting sugar syrup — carry real cost to do so.

How to Buy Honey Well
- Look for "raw" and "unfiltered" — both words, not just one.
- Look for a floral source or an apiary name. "Wildflower, Sonoma County" is information. "Pure Honey" is not.
- Expect cloudiness and crystallisation. Perfect clarity in a two-year-old jar is a processing signature.
- Be suspicious of very low prices. Honey production is slow and seasonal. Cheap honey came from somewhere.
- Buy direct where you can — farmers markets, apiaries, or brands that publish their sourcing.
- Never give honey to infants under 12 months. Honey can contain Clostridium botulinum spores, which are harmless to adults but can cause infant botulism. This applies to raw and pasteurised honey alike, and it is not negotiable.
