Honey does not spoil in the way most foods spoil, and a sealed jar stored properly will remain safe to eat essentially indefinitely. What honey does do is change. Aroma fades, color deepens, enzymes decline, and crystals form. So the honest answer is that honey does not expire, but it does age — and the best-by date on the jar is a quality date, not a safety date.
Why Honey Is Almost Uniquely Shelf-Stable
Three properties work together, and each one alone would make honey a hostile place for microbes.
1. There Is Almost No Available Water
Properly ripened honey is only about 17% water, and crucially that water is bound up by the sugars rather than freely available. Food scientists measure this as water activity, and honey typically sits around 0.5–0.6. Most bacteria need water activity above roughly 0.9 to grow, and most molds need above about 0.7. Honey simply does not offer enough free water. Any bacterium that lands in it is rapidly dehydrated by osmosis.
2. It Is Acidic
Honey has a pH of roughly 3.4 to 6.1, averaging near 3.9 — comparable to tomato juice. Gluconic acid, produced when bees add the enzyme glucose oxidase to nectar, is the main contributor. That acidity is unwelcoming to most spoilage organisms.
3. It Generates Its Own Hydrogen Peroxide
That same glucose oxidase enzyme slowly produces small amounts of hydrogen peroxide as glucose breaks down. The concentrations are tiny, but they are continuous, and they contribute to honey's well-documented antimicrobial activity. This is a large part of why honey has been used on wounds for thousands of years, and why medical-grade honey dressings are still used in clinical settings today.
Put those three together and you have a food that actively resists decay rather than merely delaying it. This is the mechanism behind the frequently repeated story of archaeologists finding pots of honey in ancient Egyptian tombs still recognizable as honey after thousands of years. The specifics of those finds are often retold loosely, but the underlying chemistry is sound.
What the Best-By Date Actually Means
In the United States, honey is not required to carry an expiration date for safety reasons. Most producers voluntarily print a best-by date, commonly one to three years out, and that date is a statement about peak quality: flavor, aroma, color, and texture. It is not a cliff edge after which the honey becomes dangerous.
Past that date you can expect the honey to still be perfectly safe, while gradually being less interesting. Delicate floral top notes are the first thing to go. This matters more for a single-origin raw honey with a distinctive character than it does for a generic blend.
How Honey Changes With Age
- Color darkens. A pale spring honey will amber up over a few years.
- Aroma flattens. Volatile aromatic compounds dissipate; this is the biggest sensory loss.
- Enzyme activity declines. Diastase and invertase, both added by the bees, degrade slowly at room temperature and rapidly with heat.
- HMF rises. Hydroxymethylfurfural accumulates as sugars break down over time and with heat exposure. The international Codex Alimentarius honey standard sets a limit of 40 mg/kg HMF for most honeys, which is used as a marker of overheating or age rather than a safety threshold.
- It crystallizes. Nearly all raw honey eventually granulates. This is normal and reversible.
The Circumstances Where Honey Genuinely Does Go Bad
Honey's defenses depend on staying dry. Break that and the picture changes.
Fermentation From Excess Moisture
Honey is hygroscopic — it pulls water out of humid air. If honey was harvested before the bees finished drying it down, or if a jar is left open in a steamy kitchen, moisture content can climb above roughly 19–20%. At that point osmotolerant yeasts, which tolerate high sugar, can begin fermenting the sugars into alcohol and carbon dioxide.
Fermented honey is easy to identify:
- Sour, winey, or yeasty smell
- Visible foam or bubbles, often at the surface
- A bulging or popping lid
- A fizzy or sharp taste
Mildly fermented honey is not dangerous and can be cooked with, but it has lost its character. Heavily fermented honey should be discarded.
Contamination From the Spoon
The most common way a home jar goes wrong is a wet or dirty utensil. Water, butter, crumbs, or peanut butter introduced into the jar creates diluted pockets where honey's protective chemistry no longer applies, and mold can take hold there. Always use a clean, dry spoon.
Visible Mold
Genuine mold growth in honey is rare and essentially always the result of dilution or contamination. Fuzzy growth, off colors, or musty smells mean the jar should go.
An Important Safety Exception: Infants
Never give honey to a child under 12 months old — not raw, not pasteurized, not cooked into food. Honey can contain dormant Clostridium botulinum spores. These are harmless to older children and adults, whose mature gut flora outcompete them, but an infant's immature digestive system can allow the spores to germinate and produce toxin, causing infant botulism. This is a serious illness. The CDC and the American Academy of Pediatrics are unambiguous on this point, and it applies to honey of every kind and quality, at every age of jar. After the first birthday, honey is fine.
How to Store Honey So It Ages Well
- Keep the lid tightly sealed. This is the single most important step, because it keeps ambient moisture out.
- Store at stable room temperature, ideally around 70°F. Avoid the cabinet directly above the stove.
- Skip the refrigerator. It offers no safety benefit and accelerates crystallization.
- Keep it out of direct sunlight. Light and heat both accelerate HMF formation and enzyme loss.
- Use glass where you can. Glass is inert and does not transmit odors or plasticizer flavors over long storage.
- Clean, dry utensils, every time.

Does Raw Honey Last As Long As Processed Honey?
In terms of safety, yes. The water activity, acidity, and peroxide chemistry that protect honey are present in raw and processed honey alike.
The differences are in how they age and what they have to lose. Raw honey retains its enzymes, pollen, and aromatic compounds, so there is genuinely more there to degrade — and it will crystallize sooner because the pollen and wax particles seed crystal formation. Ultrafiltered, flash-heated honey has already lost much of that at the point of bottling and will look unchanged on the shelf for years. Stability on the shelf and quality in the jar are not the same measurement.
