Manuka Honey vs Regular Honey: What's the Real Difference?

Manuka honey differs from regular honey in one key way: it contains methylglyoxal (MGO), a naturally occurring compound with well-documented antibacterial activity that ordinary honey has only in trace amounts. That single difference drives manuka's unique grading systems, its research pedigree, and its dramatically higher price. But "more expensive" doesn't automatically mean "better for you" — the right choice depends on how you plan to use it.

What Makes Manuka Honey Different?

Manuka honey is produced by bees that forage on the manuka bush (Leptospermum scoparium), a shrub native to New Zealand and parts of Australia. The nectar of this plant contains high levels of dihydroxyacetone, which converts into methylglyoxal as the honey matures.

Researchers Mavric and colleagues, publishing in Molecular Nutrition & Food Research (2008), found that manuka honey contains up to 800 mg/kg of methylglyoxal — roughly up to 100 times more than conventional honeys, which typically measure between 0 and 10 mg/kg. This is the compound behind manuka's "non-peroxide activity," meaning its antibacterial effect persists even when the hydrogen peroxide found in all raw honeys is neutralized.

How Manuka Is Graded: UMF and MGO

Because MGO content varies widely between batches, manuka honey is sold with grading labels:

  • UMF (Unique Manuka Factor): An independent New Zealand certification that measures MGO plus authenticity markers like leptosperin. UMF 10+ is generally considered the threshold for meaningful activity; UMF 15–20+ commands premium prices.
  • MGO rating: A direct measure of methylglyoxal in mg/kg. MGO 263+ corresponds roughly to UMF 10+.

Regular honey carries no such grading because its antibacterial activity comes almost entirely from hydrogen peroxide, enzyme content, and low water activity — properties shared by virtually all raw honeys.

What "Regular" Honey Actually Offers

Regular honey is a broad category, and the differences within it matter as much as the manuka comparison. A raw, unfiltered wildflower honey from a local beekeeper is a very different product from the ultra-filtered, sometimes heat-treated honey found in supermarket squeeze bottles. Raw honey of any floral source contains:

  • Hydrogen peroxide-generating enzymes (glucose oxidase) with mild antibacterial effects

It's a draw — and floral source matters more than the manuka label. Dark honeys like buckwheat frequently outperform lighter manuka batches on total phenolic content.

Everyday Nutrition

Essentially identical. Both are roughly 80% sugars (fructose and glucose) and about 64 calories per tablespoon. Neither is a significant source of vitamins or minerals at normal serving sizes. Anyone eating honey by the spoonful "for nutrition" is better served thinking of it as a smarter sweetener, not a supplement.

Taste and Cooking

Manuka is earthy, slightly bitter, and thick — polarizing in tea and baking. Regular honeys span a huge flavor range, from delicate clover to malty buckwheat, and most people prefer them for daily use.

Genuine UMF 10+ manuka commonly costs 5–10 times more per ounce than quality raw honey. Counterfeiting is also a real problem: New Zealand produces a limited supply each year, yet far more "manuka" is sold globally than the country exports — so uncertified jars are a genuine gamble.

Which Should You Buy?

Choose manuka if you want it for targeted uses where the MGO research applies — soothing a sore throat, supporting oral health, or topical use on minor skin irritations (with medical-grade product and your clinician's okay). Look for UMF 10+ or MGO 263+ certification, always.

Choose quality raw honey if you want everyday antioxidant support, a natural sweetener for tea and chai, prebiotic benefits, or the best flavor-per-dollar.
